Glazed Duck- When we ate at Emeril's Nola's Restaurant, I was smart enough to have the duck. It inspired me to add a duck dish to our menu. Duck is a wonderful rich dark meat and we crisp the skin with a delicate glaze that only compliments the flavor.
Brine Roasted Chicken with Mushroom Gravy- The brine infuses herbs and seasonings in the chicken. Then we roast the chicken to a golden perfection and use the stock to make a delicious rich mushroom gravy.
Grilled Center Cut Pork Chops with Herb Butter and a Red Wine reduction - Our herb butter is added to finish our perfectly grilled pork chops.
